Preserved Meyer Lemons:

Wash and scrub your lemons well. Be sure to remove any stem that may be attached. Dry them and then slice down to 1/4" from the bottom three times to create a flower looking lemon. Add kosher salt to the center and make sure it gets to all of the cut portions. Sterilize a preserving jar (boil it for 10-15 minutes depending on your altitude).
Add the salted lemons to the jar and press them down to extract some of the lemon juice. Add additional lemon juice to cover the lemons leaving about 1/2" space from the rim of the jar.
Tighten your lid and then let sit on your counter or window sill for 7 days. Shake the jars daily. The rinds will become shiny and glossy and then somewhat translucent, when this happens, store them in your fridge for another 14 days before using. They will keep in the fridge for months.
