Congo S'mores (blondies)
For the Congo Bars:
2 cups light brown or dark brown sugar
2/3 cup unsalted butter softened
2 1/2 cups AP flour
2 1/4 tsp baking powder
1/2 tsp good salt (fleur de sel)
1 1/2 tsp vanilla bean paste or extract
1 3/4 cup chocolate chips
Pre-heat the oven to 325 degrees F.
In the bowl of a stand mixer place the butter and brown sugar and cream until light and fluffy. Add the vanilla then the eggs one at a time and mix until each has been combined. Add the flour, baking powder and salt and mix on low until just combined. Fold in the chocolate chips by hand.
Bake in a parchment or buttered 9x13" pan for 28-35 minutes or until a toothpick inserted comes out with just a few crumbs attached. Do not over bake.
For the S'mores:
Chocolate bars cut into large chunks
Once the Congo Bars have baked, turn the oven to broil and set the rack in the top 1/3 of the oven. Top the Congo Bars with mini marshmallows in a single layer. Place under broiler for about 30 seconds until the marshmallows begin to puff up and are nicely toasted. Remove and allow to cool for 1-2 minutes before topping with chocolate chunks. Allow to cool completely before cutting into bars.
