Blood Orange Chia Parfait
Blood Orange Chia Parfait:
2 T chia seeds
1/4 cup vanilla almond milk
1/4 cup blood orange juice (or 1/2 cup and omit the almond milk)
2 tsp honey
In a small glass jar with a lid, combine the chia seeds, almond milk, blood orange juice, and honey and stir. Store in the fridge overnight, stirring once before you go to bed and again in the morning before serving.
1 jar of overnight blood orange chia
1 blood orange, supremes (remove the top and bottom and slice off the pith and peel then slice between the membranes to segment beautifully)
2 T honey vanilla Greek yogurt (or your favorite kind)
1-2 tsp pistachios rough chopped.
Stir the chia and top with yogurt, blood orange segments and pistachios. Enjoy!
