During the week I love cooking with fresh clean flavors. I love nothing more than a bright vibrant salad and the colors you can add to make it even more appetizing. Vegetarian and vegan food is not bland or boring although you could certainly add grilled salmon or chicken to the salad for extra protein.
Watermelon radish is one of the most colorful and pretty root vegetables. When in season, it has a more mild flavor than traditional or breakfast radish that you commonly see.
I decided to make three separate dishes using watermelon radish and the results are delicious! You can easily make three separate dishes using very similar ingredients and get creative in the kitchen. Any of them would be great for parties or brunch with your friends and family.

The third recipe is a favorite of mine, Kale Brussels Salad. I think if I had to, I could eat a kale salad every day and enjoy it. I have had many different kale salads but this one is especially colorful and vibrant. The dried cranberries and roasted pumpkin seeds add sweet and crunchy elements.
