The weather is heating up here in Texas. That means it's time for Popsicles! One of my favorite treats to give my daughter is a watermelon Popsicle. It's just what it sounds like but the flavor gets a boost from lime juice and my adult version has chili lime seasoning, that I get at a local Mexican market.
The how to:
1 watermelon, any size and variety
popsicle sticks (I use mini sticks but the big ones work also)
chili lime seasoning or chili powder (optional)
sheet pan lined with parchment paper
Cut the watermelon into wedges. Using a paring knife, carefully slice thru the rind in the center to be able to insert the Popsicle stick. Place the watermelon wedges on a sheet pan lined with parchment paper. Squeeze lime juice over the watermelon. Top with optional salt and chili lime seasoning if desired. Place in the freezer for at least 2 hours before transferring to a plastic bag for longer storage in the freezer (so they don't stick together).
