A tropical breakfast isn't just for vacation. Even on this rainy Dallas morning, I was able to have a tropical escape using a few simple ingredients. Vanilla and fresh fruit add a natural sweetness and sprinkles add a pop of color and texture to these fun pancakes. Tropical Funfetti Pancakes
1 cup whole milk
1 cup self rising flour
1 tsp vanilla
2-3 T rainbow sprinkles
2-3 T chopped tropical fruit like mango, pineapple, bananas etc.
*fresh strawberries and fruit infused maple syrup for serving
In a bowl, mix together the milk, egg, flour, and vanilla. Gently fold in the tropical fruit and sprinkles. Heat a griddle or pan over medium heat and spray with non-stick spray or use a small amount of butter to keep the pancakes from sticking. Pour batter on to heated pan and top with additional sprinkles. Cook until small bubbles form, then flip and continue to cook until puffed and slightly browned.
*For the Tropical Maple Syrup: Mix 1/4 cup of maple syrup with 1-2 T tropical fruit juice such as pineapple, mango or passion fruit. Warm slightly and serve with pancakes and sliced strawberries. Top with additional sprinkles!
