As a mom and wife who loves delicious food, it's easier for me to cook something that takes a short amount of prep in the late afternoon and will be ready and waiting when my family is ready to eat. So much happens in the evening hours after my husband gets home from work and between him and chasing a toddler, I've found it easier to cook a little bit earlier and enjoy those precious family moments together. We really love tacos. Tacos in all forms. Yes, I have ordered the now famous Taco Cleanse book and am anxiously awaiting it's arrival. That book is strictly vegan recipes so I thought I would share one of my favorite recipes that is very NOT vegan.
Tiny tacos are my favorite. You can find the smaller tortillas from a local market/taqueria or even at your grocery store. Mine are 4 inches in diameter but the specialty places may have them even smaller! They can be frozen and easily thawed and heated whenever your taco craving kicks in! I put them in plastic wrap in small stacks of 5-10 inside a freezer ziplock bag and just pull them out when I need them.
This pork recipe is one of the most delicious. Just ask my husband who will actually eat these left-over. It basically cooks itself inside my favorite kitchen vessel, a Le Creuset French oven. Something magical happens in that thing. Braising pork allows the flavors to come together and it becomes fork tender. I think the oven does the majority of the work for you. These tacos are fabulous for parties and large family meals. Easy to make and delicious enough to please many people. On weeknights, I start the prep between 3:30-4pm and they are ready between 6:30-7pm or anytime after that when we are ready to eat. Pretty awesome.
