Brunch is one of my favorite words. It ignites thoughts of breezy outdoor meals enjoyed on a relaxed day with tons of fresh ingredients and even a few sinful ones. While we don't always get to brunch like we're on vacation, it's nice every once in a while to act like it. Even mid-week.
I need to be better about eating breakfast and taking care of myself. It's easy as a mom to get some coffee in me and make sure my toddler has a balanced breakfast but I often skip it myself. It's not that I don't enjoy taking care of myself too, sometimes I just don't think about it. Brunch is a healthy compromise for me. I timed myself today as I made two eggs over medium and some sautéd baby spinach, kale and chard. It was less than five minutes. Cleanup was 15 seconds thanks to my favorite GreenPan. Why can't I take 5 minutes and 15 seconds a day to make myself a healthy power brunch? I can.

It makes cooking during the day super easy. I use it so often that now I have two. It's the perfect size for smaller meals and makes for easy cleanup with it's non-stick surface. You can also use fewer oils and fats in your recipes and it still browns food properly. I'm a big (un-paid for now) fan! I make kid sized portions of fresh food for Audrey at almost every meal using this pan. Fried Rice, sautéed vegetables, and in the morning, French Toast. It's fabulous.
Another thing about the perfect power brunch is fresh squeezed juice. It's something my mother makes daily and what my husband expects after visiting her over the holidays. He grew up in Florida and is a self-proclaimed orange juice snob. I grew up in Orange County, so I guess I could claim the same sort of title. Either way, fresh juice is so good, even when not being used in a mimosa.
For the days I don't want to eat eggs, I can make great smoothies with the power greens and fresh squeezed juice. Avocado toast is also a favorite of mine. There are so many fabulous nutrient filled foods that make for a tasty brunch. Why not try some of these things mid-week and take better care of yourself?
