Petit Peach Pies
Prepared pie dough, (homemade or store bought)
6 small or medium ripe peaches, peeled, pitted and sliced thin
1/4 cup brown sugar
1/4 cup turbinado sugar
1/4 cup lavender sugar
juice of 1/2 lemon
1/2 tsp cinnamon
1/4 tsp nutmeg
pinch ground cloves
pinch of allspice
1/4 tsp good salt
1/4 cup cornstarch
Prepare the pie dough and roll it out into a thin sheet. Cut rounds larger than mini pie pans or tart molds and press into place. Chill for 20-30 minutes as you prepare the filling.
For the filling, toss all ingredients in a bowl until combined. Fill the chilled mini pie crusts with peach filling and top with decorative lattice braids and cutout flowers. Allow to chill 20 minutes before baking, on a lined sheet pan.
Preheat oven to 425F degrees. Place pies on lined sheet pan in the center rack of the oven for 15-20 minutes, until tops are golden brown. Cover with foil, so crust does not burn, and reduce temperature to 325F and continue to bake for another 15-20 minutes, until filling is bubbly, peaches are tender and crust is cooked through. Allow to cool before removing from pie or tart molds. Can be served warm or room temperature with ice cream or vanilla whipped cream.
