Using just three simple ingredients, you can make your own Limoncello!
Living in Texas, the weather has started to warm up. One of my favorite hot weather drinks is limoncello. The great part about having this limoncello around is that you can add it to your favorite lemon recipes and it will make them even more delicious. I'm talking about lemon pies, tarts, cookies, bars, and even your savory dishes.
My homemade limoncello recipe is easily doubled, should be served super cold, and also makes a great hostess gift!
6 lemons, zested using a vegetable peeler making sure there is no white pith (it's bitter)
2 cups vodka, Titos!
1/2 cup simple syrup*
Zest the lemons and place the zest in a glass jar. Add vodka and let sit for 24 hours or until the vodka has gone from clear to vibrant yellow and the lemon zest has lost it's color and appears more white.
Strain the infused vodka from the zest and add the simple syrup. Chill and serve!
*Simple Syrup is equal parts sugar and water brought to a boil then cooled. I make it with 1 cup sugar and 1 cup water, and refrigerate the extra for other cocktails and recipes.
