I think my favorite time of year has changed to blood orange season. Years ago, I would use blood oranges in salads, and make a fabulous oven roasted chicken stuffed with blood oranges. Currently I am obsessed with using blood oranges in brunch and dessert. I made two different but easy chia parfait recipes. They only take a few minutes of prep and sit in the fridge overnight as they turn into something magical. If you are not familiar with chia seeds, they are a fabulous seeds, that absorb liquid and swells into a magical healthy pudding-like superfood. They come in black or white but the taste and health benefits are virtually the same. I find black chia is more commonly found and it is what I use. My daughter and I both love chia parfait and I'm excited to share this blood orange version with you!
This healthy, quick prep recipe is great for a weekend brunch or busy weekday morning when you are on-the-go! The difference in my two test kitchen chia jars was one was all blood orange juice and the other had half vanilla almond milk and half juice. Blood Orange Chia Parfait:
2 T chia seeds
1/4 cup vanilla almond milk
1/4 cup blood orange juice (or 1/2 cup and omit the almond milk)
2 tsp honey
In a small glass jar with a lid, combine the chia seeds, almond milk, blood orange juice, and honey and stir. Store in the fridge overnight, stirring once before you go to bed and again in the morning before serving.
1 jar of overnight blood orange chia
1 blood orange, supremes (remove the top and bottom and slice off the pith and peel then slice between the membranes to segment beautifully)
2 T honey vanilla Greek yogurt (or your favorite kind)
1-2 tsp pistachios rough chopped.
Stir the chia and top with yogurt, blood orange segments and pistachios. Enjoy!
